Greek Yogurt Chicken
Instead of your basic, everyday chicken and rice, this recipe boasts a flavorful way to prepare chicken that is satisfying, interesting and delicious! This is a recipe that my husband and I go back to over and over again because it just hits the spot every time. We usually have it on a salad or grain bowl, as it pairs so well with loads of veggies! When I make this chicken, I typically choose to serve it in a grain bowl- my favorite toppings include quinoa, chopped kale, roasted chickpeas (roasted with the same seasonings as the chicken), diced cherry tomatoes, crumbled feta cheese, pickled red onions and a tzatziki dressing. It’s the perfect balance of warm and comforting yet cool and refreshing! We typically buy tzatziki dressing from the store just to make things easier on a weeknight, but if you have the time and desire to make a homemade tzatziki dressing, that would be delicious as well! Other greek yogurt based dressings would also be great to pair with this chicken, such as the Bolthouse Farms dressings that you can find at many grocery stores.
Ingredients
1 lb chicken breast
*1/3 cup plain, nonfat greek yogurt OR light sour cream
1 1/2 tsp turmeric
1 1/2 tsp garam masala
1 tsp smoked paprika
1 tsp chili powder
Sprinkle of salt and pepper
1 tbsp olive oil
Instructions
Dice your chicken breasts into 1 inch cubes, then add to a bowl. Add the greek yogurt and spices, then mix to coat each piece of chicken evenly. At this point you can choose to marinate the chicken for up to 24 hours OR begin cooking right away. (I have tried marinating it overnight and cooking it right away, and I think the flavor is still very good when cooking it right away!)
When ready to cook, heat a tbsp of olive oil in a pan over medium heat. Add the chicken to the pan and cook until the chicken is cooked through, flipping the pieces to get an even brown on all sides, ~7 minutes. Remove any excess liquid/oil from the pan then serve immediately, or store in an air-tight container in the refrigerator for up to 4 days.
